Belarusian cuisine

Belarusian cuisine has very rich and interesting history during many centures.  It has much in common with cuisines of environing nations: Russians, Ukrainians, Poles and also it test the great effect of nearest cuisines – Lithuanian and Latvian.

Belarusian cuisine has persistently saved national particular qualities which depend on specialization of farm since olden times – production of meat, milk, vegetables, grain, potatoes.

Recipes of Belarusian cuisine frequently consist of a plenty of meat,     mushrooms and potato. The most popular meat is pork, but fish and fowl are also very popular. You   also shouldn’t forget about plenty of infusions,  kissels  and birch kvass – without these drinks you can’t imagine Belarusian cuisine.

One of the most important particular qualities of Belarusian cuisine is wide using of potatoes. It could be explained by historical reasons – potatoes appeared in Belarus 75-90 years earlier than in Russia and climatic conditions helped breeding and raising different tasty sorts of potatoes. Belarusians call potatoes “the second bread”

Pancakes – Belarusian potatoes fritters

For preparation of pancakes we should use raw potatoes and raw onion. These vegetables are galled on grater. In potatoes mass we should add flour and salt and then accurately mix all ingredients. Then we fry our pancakes with oil till the golden color.

You can serve potatoes pancakes with sour cream, fried mushrooms and fried lard.

 

 

Pancakes stuffed with meat

For preparation of pancakes stuffed with meat we also use raw potatoes galled on grater. But when we fry these pancakes we should add pork mince mixed with onion in the middle of them. You can serve this dish with sour  cream and fried lard.

 

 

 

Roast “Berestie”

We share chicken to small pieces and then take it to the pots. Then add fried onion, small pieces of fried potatoes, raisins, sour cream sauce and crushed nuts and stew the roast until it will be ready. The roast should be served in the pot.

 

 

Machanka with potatoes pancakes

We fry pork brisket, then add broth and stew these ingredients. To the ready meat we should add fried domestic sausage. Then we make sauce from broth, fried flour and onion. Then we perfuse our meat with this sauce. You can serve this dish with potatoes pancakes. You can eat this dish like belarusians: take the pancake , roll it up and dip into the sauce.

 

 

 

Kissel or Fruit-Drink from cranberry

Kissel and fruit-drink from cranberry are enriched, nutritious, refreshing drinks. For preparation of them is used fresh cranberry.  For preparation of kissel we should add farina. Thanks to its viscous consistence kissel is useful for everybody.

Ready drinks are served in glass and should be cold.

 

 

 

“Belarusian” Grilled beef dish from pork

Pork meat is sliced into pieces, salt ,pepper is added and is fried until it would be ready, then fried onion is added. You can try this dish with traditional garnish: fried potatoes, mashed potatoes or buckwheat.

 

 

 

Pork grilled with mushrooms

We should take a chop, add salt, pepper and fry it. From one of the chop we add fried onion, garlic and boiled mushrooms. Then add mayonnaise, cheese and take it to the oven. You can serve it with garnish.

 

 

Belarusian snack

For preparation of this snack we use salty bacon (sliced into small pieces), salty cucumber, onion, horseradish and slices of rye bread.

 

 

 

Salad “ Nesvizhski’

This salad is kind of very popular in our country salad “Herring under vegetables”

We use in this salad: boiled vegetables – beet, carrot, potatoes. We also add salty herring, mayonnaise and mix all ingredients.

 

 

 

Salad “ Polessye”

We use in this salad boiled pork and mushrooms, then add boiled eggs and mayonnaise.
